Mango-Beef_cIngredients:
* 1 lb (450 g) lean beefsteak
* 1 tablespoon plus 1 teaspoon light soy sauce
* 3 teaspoons Chinese rice wine or dry sherry
* 2 teaspoons cornflour
* 2 fresh mangoes
* 1 1/2 tablespoons oil (preferably groundnut)
* 2 teaspoons dark soy sauce

1. Cut the beef into thick 1/4 x 2 inch (0.5 x 5 cm) slices and put them into a bowl. Add 1 tablespoon of the light soy sauce, 2 teaspoons of the rice wine and the cornflour and mix well.
2. Peel the mangoes and cut them into thick slices, discarding the stones.
3. Heat a wok or large frying-pan, then pour in the oil. Add the beef and stir-fry for 2 minutes to brown. Add the remaining 1 teaspoon light soy sauce, the dark soy sauce and the remaining 1 teaspoon rice wine and stir-fry for 30 seconds. Then add the mango slices and heat them through. Give the mixture a final stir and serve at once. The beef should be slightly undercooked as it continues to cook for a short time after it is removed from the wok.
