1 oz driedlentils
1/2 onion, thinly sliced
3/4 pint boiling water
salt and freshly ground pepper
1/2 beef stock cube, crumbled
1 teaspoon tomato ketchup


Metric
25 g driedlentils
1/2 onion, thinly sliced
450 ml boiling water
salt and freshly ground pepper
1/2 beef stock cube, crumbled
1 x 5 ml spoon tomato ketchup


Wash the lentils under cold running water, then drain and place in a large bowl. Add all the remaining ingredients, cover loosely with cling film and MICROWAVE ON HIGH for 15 minutes. Carefully remove the cling film and stir thoroughly. Without covering MICROWAVE ON HIGH for 5-10 minutes or until the lentils are soft.
Serve immediately or puree in a blender if a smooth soup is preferred.
Serves 2

NOTE: For 4 servings, double the quantities. Prepare as above, but add only half the water before MICROWAVING  ON  HIGH  for 35-40 minutes. Remove cling film, add the remaining water, stir and cook for 5-10 minutes or until the lentils are soft.
