Lemon-meringue-pizzaIngredients:
* 1 quantity Traditional Pizza Dough, made up to end of step 3

Topping:
* 9 teaspoons cornflour
* juice and grated peel 2 lemons
* 220 g (7 oz/1 cup) caster sugar
* 2 eggs, separated
* star fruit and lemon balm, to decorate

1. Preheat oven to 200C (400F/Gas 6). Prick dough with a fork and bake in the oven for 20 minutes until golden. Leave to cool slightly. Reduce oven temperature to 180 C (350F/Gas4).
2. Make topping, place cornflour, lemon juice and peel in a saucepan with 100 ml (3 1/2 fl oz l 1/3 cup) water. Bring slowly to the boil, stirring until mixture thickens. Add 125 g (4 oz l 1/2 cup) sugar and the egg yolks, then beat well. Spoon on top of pizza.
3. In a large bowl, whisk egg whites until stiff. Whisk in half of remaining sugar, then fold in the rest. Pipe or spoon on top of lemon mixture to cover filling completely. Bake in the oven for 10 minutes until meringue is golden. Serve decorated with slices of star fruit and lemon balm leaves.
