1 lb leeks, cut into 1 inch slices
1 oz butter
salt and freshly ground pepper
1 tablespoon lemon juice
1 tablespoon grated Parmesan cheese

500 g leeks, cut into 2.5 cm slices
25 g butter
salt and freshly ground pepper
1x 15 ml spoon lemon juice
1x 15 ml spoon grated Parmesan cheese

Place the leeks in a shallow dish. Dot with butter and sprinkle with salt. Cover with cling film and MICROWAVE ON HIGH for 8 minutes, stirring halfway through cooking. Add the lemon juice, stir and cover. MICROWAVE ON HIGH for 3 minutes, or until the leeks are tender. Sprinkle with cheese and pepper. Leave to stand covered for at least 3 minutes before serving.
