2 teaspoons vegetable oil
2 tablespoons flour
2 tablespoons Demerara sugar
4 orange slices, rinds removed and halved
7 tablespoons hot chicken stock
2 tablespoons clear honey
salt and freshly ground pepper
mint sprigs


Metric
4 thick lamb chops
2 x 5 ml spoons vegetable oil
2 x 15 ml spoons flour
2 x 15 ml spoons Demerara sugar
4 orange slices, rinds removed and halved
7 x 15 ml spoons hot chicken stock
2 x 15 ml spoons clear honey
salt and freshly ground pepper
mint sprigs


Make two horizontal slits through the meat to the bone, but do not completely cut through. Brush both sides of the chops with oil and coat with flour. Sprinkle with the sugar, then insert an orange slice into each slit.
Preheat a browning skillet for 5 minutes. Put the chops into the skillet, arranging the thicker parts towards the outside. MICROWAVE ON HIGH for 4 minutes, turning the chops over after 2 minutes. Mix together the stock, honey and seasoning then pour into the skillet. Cover and MICROWAVE ON LOW for 8-10 minutes, until the meat is tender. Leave to stand covered for 5 minutes, before garnishing with mint.
