* 500 g (1 lb) lean minced beef
* 1
onion, finely grated
* 1 garlic clove, crushed
* 1 tablespoon tomato puree
* 1/2 teaspoon dried oregano
* vegetable oil, for brushing
* 75 g (3 oz) mozzarella cheese, cut into 4 equal slices
* 4 tomato slices
* salt and pepper

1. Put the minced beef, onion, garlic, tomato puree, oregano and salt and pepper into a large bowl and stir well to mix. Using floured hands, divide the mixture into 4 equal portions and shape into burgers. Cover and chill in the refrigerator for up to 12 hours until you are ready to cook the burgers.
2. Brush the burgers all over with oil and cook on an oiled grid over hot coals on a preheated barbecue for 5 minutes. Turn the burgers over and, after a few minutes, place a slice of cheese on top of each one. Cook for a further 8 minutes or until the cheese is melted and the burgers are cooked according to taste. Top each burger with a tomato slice before serving. If wished, serve the burgers in split buns.
