* 1 tablespoon oil (preferably groundnut)
* 1 lb (450 g) minced lamb
* 3 tablespoons coarsely chopped garlic
* 2 tablespoons coarsely chopped fresh root ginger
* 2 tablespoons tomato puree
* 2 tablespoons
sesame paste
* 1 1/2 tablespoons dark soy sauce
* 1 tablespoon lemon juice
* 1 tablespoon chilli bean sauce
* 2 teaspoons sugar
* 1 tablespoon Chinese rice wine or dry sherry

Heat a wok or large frying-pan, then add the oil and lamb. Stir-fry for 2 minutes and add the garlic and ginger. Continue cooking for another minute, then stir in the tomato puree, sesame paste, soy sauce, lemon juice, chilli bean sauce, sugar and rice wine. (You will find it quicker, when required to add a number of ingredients at the same time as here, to measure them all into one bowl and add them in one go). Cook for another 4 minutes. Serve at once.
