* 1 quantity Traditional Pizza Dough, made to end of step 2

* 1 quantity Tomato Topping
* 12-14 slices coppa, or Parma, smoked ham
* 185 g (6 oz) Mozzarella cheese, sliced
* olives, anchovies and thyme sprigs, to garnish

1. Preheat oven to 220C (425F/Gas 7). Grease several baking sheets. Roll out dough very thinly and cut out 12-14 circles with a 4-5 cm (1 1/2 - 2 in) cutter.
2. Spread dough with Tomato Topping. Top each circle with a slice of coppa, or Parma, ham and a slice of Mozzarella. Bake in the oven for 10-15 minutes until the dough is cooked and the cheese has melted. Serve at once, garnished with olives, anchovies and thyme.
