Ham--salami-calzoncelliIngredients:
* 1 quantity Traditional Pizza Dough, made up to end of step 2
* cress and radish slices, to garnish

Filling:
* 60 g (2 oz) sliced ham
* 60 g (2 oz) sliced salami
* 60 g (2 oz) Mozzarella cheese
* 2 tablespoons chopped fresh parsley
* 1 tablespoon freshly grated Parmesan cheese
* 1 egg, beaten
* salt and pepper

1. Preheat oven to 200C (400F/Gas 6). Grease 2 baking sheets. Knock back risen dough and knead briefly. Roll out and cut dough as for Salmon Calzoncelli.
2. Chop ham and salami very finely. Place in a bowl. Grate Mozzarella cheese and put in bowl with parsley and Parmesan cheese. Stir in egg and season to taste with salt and pepper. Mix thoroughly.
3. Place 1 teaspoon of the mixture on one half of each circle. Dampen edges with water, then fold over to enclose filling and seal well by pressing with a fork. Transfer to baking sheets and bake for 15 minutes until golden. Serve hot or cold, garnished with cress and radish slices.

Serves: 10-15

Variation: Chop 90 g (3 oz) mushrooms finely and mix with 6 tablespoons Tomato Topping and 1 tablespoon freshly grated Parmesan cheese. Use as the filling.
