* 3 tablespoons spring onions, finely chopped
* 2 teaspoons fresh ginger, finely chopped
* 2 teaspoons salt
* 1 teaspoon light soy sauce
* 3 tablespoons oil, preferably groundnut

Put all the ingredients except the oil in a small heatproof bowl and mix them well. Heat a wok or frying-pan and add the oil. Continue to heat until the oil is almost smoking. Remove the pan from the heat and pour the hot oil into the bowl with the other ingredients. The sauce should sizzle for a few seconds and is ready for use.
