Gammon-with-PineappleIngredients:
* 4 gammon steaks, smoked or unsmoked, about 175 g (6 oz) each
* melted butter, for brushing
* 2 teaspoons English or French mustard
* 2 tablespoons demerara sugar
* 200 g (7 oz) can pineapple rings in natural juice

1. Snip the rind around the gammon steaks at regular intervals with a pair of scissors. This will help to prevent them curling up. Brush each steak with melted butter, then spread thickly with mustard and sprinkle with sugar.
2. Grill the gammon steaks on an oiled grid over medium-hot coals on a preheated barbecue for about 3-4 minutes on each side.
3. Drain the pineapple rings, then grill them for 1 minute on each side. Place a pineapple ring on top of each gammon steak. Serve immediately with a potato salad.
