* 18-20cm (7 or 8 inch) flan case
* Fresh Fruit

Fresh Fruit, uncooked
Carefully wash and dry 350-450g (3/4-1 lb) fresh fruit (raspberries, strawberries, grapes, etc). Arrange neatly in a flan case. Top with Arrowroot Glaze, Flavoured Jelly or Apricot Glaze.

Fresh Fruit, Cooked
Wash and prepare 450g (1 lb) fresh fruit (plums, pears, gooseberries, etc).
Simmer very gently in 150ml (1/4 pint) water and 50-75g (2-3 oz) sugar until just cooked but not broken up. Leave to cool. Strain very thoroughly. Arrange fruit neatly in flan case. Use fruit juice to make glaze.
Confectioners custard may be used as a base in a flan or tartlets before arranging the fruit on top.

Serves: 4-6.
Preparation time: 10-15 mins
Cooking time: 5-10 mins (depending upon type of fruit)

Fruit Tartlets
Make and bake tartlet cases. Divide fruit evenly between cases, and glaze.
