* 1 quantity Traditional Pizza Dough, with walnuts, shaped and ready for topping

* 2 small leeks, finely shredded
* 2 tablespoons walnut or olive oil
* salt
* 250 g (8 oz) Brie or Camembert cheese
* 1 teaspoon green peppercorns in brine, drained
* 15 g (1/2 oz / 2 tablespoons) chopped walnuts

1. Preheat oven to 220C (425F/Gas 7). Make the topping. Put leeks in a saucepan with 1 tablespoon oil. Cook gently for 5 minutes, stirring until soft. Brush dough with remaining oil, then spoon over the leeks. Season to taste with salt.
2. Slice cheese thinly, arrange over leeks. Lightly crush some or all of the peppercorns and sprinkle over leeks. Scatter walnuts over top. Bake in the oven for 20 minutes until dough is crisp and golden.
