* 4 large ripe tomatoes
* 142 g/5 oz very low fat natural fromage frais
* 3 spring onions, finely chopped
* 1 garlic clove, crushed
* 1 yellow pepper, deseeded and finely chopped
* 1 tablespoon finely chopped parsley
* salt and ground black pepper

1. Cut the tomatoes in half horizontally and scoop out and discard all the seeds. Set aside while you make the filling.
2. Mix the fromage frais with the spring onions, garlic, yellow pepper and parsley. Blend well and season to taste with salt and pepper.
3. Fill the scooped out tomatoes with the prepared filling and serve immediately.
