* 450 g (1 lb) thick fillets of cod, skinned
* coarse sea salt and freshly ground black pepper
* 25 g (1 oz) softened butter
* 2 tbsp chopped mixed fresh herbs, e.g. parsley, thyme, oregano, basil
* 1 tbsp fresh squeezed lemon juice

1. Pre-heat an oven to 180°C/350°F/Gas Mark 4. Mix the softened butter together with the chopped herbs and lemon juice. Place the fish in a small ovenproof dish, season with salt and pepper and then spread the herb butter over the top.
2. Place in the oven and cook until the fish is cooked through (8 to 10 minutes). Flake with a fork, checking to make sure that there are no bones.

Serves: 2 to 3 portions
