1 x 2.25 kg duck

100 g petit pois
1/2 x 2.5 ml spoon ground ginger


Cover the leg and wing tips of the duck with small pieces of foil. Place, breast side down, on a trivet or upturned bowl in a large shallow dish. MICROWAVE ON HIGH for 30 minutes. Remove the foil and turn the duck over. Prick the skin in several places. Baste and MICROWAVE ON HIGH for 20 minutes. Lift the duck from the dish and drain. Remove all the flesh from the bones and cut into neat pieces. Sprinkle with salt. Pour off the fat from the dish, leaving the juices. Add 150 ml/1A pint lychee juice and the peas. Sprinkle with ginger, cover and MICROWAVE ON HIGH for 5 minutes. Stir in the duck and, without covering, MICROWAVE ON HIGH for 2-3 minutes until reheated. Serve surrounded by lychees.
