* 2 small chicken breasts
* 1/8 tsp paprika
* 1/8 tsp mild chilli powder
* 1/8 tsp cumin (optional)
* 1/4 tsp oregano
* 1 tbsp plus
* 1 tsp olive oil
* 1 clove garlic, crushed
* 1 onion, peeled and thinly sliced
* 1/2 small red pepper (capsicum), de-seeded and thinly sliced
* 8 small flour tortillas
75 g (3 oz) shredded Iceberg lettuce
* 75 g (3 02) Cheddar cheese, grated
* 3 tbsp sour cream

Tomato salsa:
* 1/2 tbsp olive oil
* 1/4 green chilli, finely sliced
* 1/2 onion, peeled and chopped
* 1/4 small green pepper (capsicum), de-seeded and diced
* 1 small clove garlic
* 1/2 tsp red wine vinegar
* 1 x 200 g (7 oz) can chopped tomatoes
* salt and freshly ground black pepper
* 1/2 tbsp parsley

1. Toss the chicken in the paprika, chilli powder, cumin and oregano. Heat 1 teaspoon of the oil in a pan and saute the chicken, staring occasionally, for 3 to 4 minutes. Remove the chicken with a slotted spoon. Add the remaining tablespoon of oil and saute the garlic, onion and red pepper for 5 minutes. Return the chicken to the pan, season to taste and heat through.
2. To make the tomato salsa, heat the oil and fry the chilli, onion, pepper and garlic for about 5 minutes. Add the vinegar and cook for about 20 seconds. Add the chopped tomatoes, salt and pepper and parsley and simmer, uncovered, for about 15 minutes.
3. To assemble, heat the tortillas in the microwave according to the packet instructions. Then place some of the chicken mixture along the centre of each tortilla, top with some tomato salsa, shredded lettuce, grated cheese and a little sour cream and roll up.
