6 oz ground rice
3 oz brown sugar
6 oz butter, diced
4 oz block cooking dates
4 oz sultanas
2 tablespoons clear honey
1 tablespoon lemon juice
2 tablespoons water
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon


Metric
175 g self-raising flour
175 g ground rice
75 g brown sugar
175g butter, diced
100 g block cooking dates
100 g sultanas
2 x 15 ml spoons clear honey
1 x 15 ml spoon lemon juice
2 x 15 ml spoons water
1/2 x 2.5 ml spoon nutmeg
1/2 x 2.5 ml spoon cinnamon


Combine the flour, rice and sugar in a large bowl, and rub in the butter. Put the dates, sultanas, honey, lemon juice and water in a shallow dish and MICROWAVE ON HIGH for 1 minute. Break up the dates and mash with a fork, adding a few drops of water if necessary. Stir in the nutmeg and cinnamon. Without covering, MICROWAVE ON HIGH for 1-1 1/2 minutes until the mixture thickens.
Grease a shallow 20 cm/8 inch square dish. Spread half the crumble mixture evenly over the base. Cover with the date mixture, then top with remaining crumble. Press the mixture down firmly, then MICROWAVE ON HIGH for 6 minutes, giving the dish a half-turn after 3 minutes. Cool slightly, then mark into bars. Cool completely before serving.
