* 2 eggs, size 2
* 25g (1 oz) castor sugar
* 275ml (1/2 pint) milk
* Vanilla essence or nutmeg

1. Beat eggs and sugar together in a bowl.
2. Warm milk and pour over eggs, stirring all the time.
3. Place in a double saucepan or in a jug placed in a pan of hot water and stir over moderate heat until mixture thickens and will coat the back of a wooden spoon. Do not allow to boil.
4. Add vanilla essence or grated nutmeg and pour at once into serving jug or the custard will continue to cook in the saucepan and will curdle. Serve with fruit tart or stewed fruit, etc.

Microwave Instructions
1. Place the milk and vanilla essence in a 575ml (1 pint) jug and heat on HIGH for 2 minutes.
2. Place the eggs and sugar in a medium-sized bowl and beat together. Add 25g (1 oz) flour and blend well.
3. Gradually stir the milk into egg mixture.
4. Cook the custard on HIGH for 2 minutes, whisking every 30 seconds until thick and smooth.
