* 600 ml (1 pint) white wine vinegar
* 75 g (3 oz) sugar
* 1 tablespoon mustard seeds or 1 teaspoon English mustard powder
* 1 teaspoon salt
500 g (1 lb) sweetcorn kernels, fresh or frozen
* 1 green pepper, cored, deseeded and finely chopped
* 1 red pepper, cored, deseeded and finely chopped
* 1 onion, finely chopped
* 4 celery sticks, finely sliced

1. In a large bowl, mix a little of the vinegar with the sugar, mustard and salt to make a smooth paste, then stir in the remaining vinegar.
2. Pour the mixture into a large saucepan and bring slowly to the boil. Add the vegetables to the pan and simmer, uncovered, for 20 minutes or until the vegetables are just tender. Pour into clean, warm jars or bottles and then seal with a vinegar-proof cover.

Makes about 1 kg (2 lb)
