Name Chinese Barbecued Spare Ribs

* 1.5 kg (3 lb) spare ribs, separated between the bond
* salt and pepper

Chinese marinade:
* 4 tablespoons hoisin sauce
* 2 tablespoons clear honey
* 4 tablespoons soy sauce
* 4 teaspoons wine vinegar
* 8 tablespoons chicken stock
* 1/4 teaspoon Chinese five spice powder

1. Put all the marinade ingredients in a bowl or fug and stir briskly until they are thoroughly blended. Alternatively, shake them together in a screw-top jar.
2. Rub the spare ribs all over with a little salt, then sprinkle generously with freshly ground black pepper and place in a shallow dish. Pour the marinade over the spare ribs, cover and leave in the refrigerator or a cool place for 4 hours, turning the ribs halfway through.
3. Drain the marinade into a jug and put the spare ribs into a hinged wire grill (this makes turning the ribs a much quicker operation). Cook the ribs on the oiled grill of a preheated barbecue for 10 minutes, then turn them over and cook tor a further 10 minutes.
4. Baste the top side of the ribs with the marinade, turn again and cook for 15 minutes. Baste the ribs and turn again, cooking them for a final 10 minutes. Serve with boiled rice and salad or stir-fried vegetables.
