* 1 small green pepper, cored and deseeded
* 2 small green chillies, deseeded
* 1 garlic clove, peeled
* 4 tomatoes, skinned and deseeded
* 1 small onion
* 4 tablespoons medium sweet white wine
* 6 boned pork chump chops
* salt and pepper
* coriander sprigs, to garnish

1. Place all the vegetables together with the white wine and a good shake of salt and pepper in a food processor or blender and blend to a spicy paste. Place the pork chops in a shallow dish and spread with the spicy mixture. Cover and leave to marinate in the refrigerator or a cool place for 2 hours.
2. Remove the pork chops and then drain off the marinade. Pour the marinade into a small pan and heat through gently over a low heat.
3. Sear the pork chops over hot coals on a preheated barbecue for 3-4 minutes on each side. Move the chops to a place over the warm coals and cook for a further 10-12 minutes or until the meat is firm and golden brown. Serve with the marinade, garnished with coriander.
