* 225g (8 oz) lean minced beef
* 1 onion, peeled and chopped
* 50g (2 oz) mushrooms, sliced
* 50g (2 oz) red pepper or pimento, chopped
* 2-3 x 5ml spoons (2-3 teaspoons) chilli powder
* Pinch of cayenne pepper
* Salt and black pepper
* 275ml (1/2 pint) beef stock
* 1 x 200g (7 oz) can of tomatoes
* 225g (8 oz) canned red kidney beans, drained
* 2 x 5ml spoons (2 teaspoons) cornflour, blended with a little water

1. Place the beef and onion in a saucepan over a moderate heat and brown. Drain off surplus fat.
2. Add mushrooms, pepper or pimento, seasonings, stock and tomatoes. Bring to the boil.
3. Add kidney beans and simmer for about 30-40 minutes until cooked.
4. Add cornflour mixture, stirring until thickened.
