* 1/2 small onion, peeled and chopped
* 1 medium carrot, peeled and sliced
* 1 tbsp vegetable oil
* 300 ml (10 fl oz) unsalted chicken stock
* 100 g (4 oz) chicken breast, cut into pieces
* 350 g (12 oz) sweet potatoes, peeled and diced
* 75 g (3 oz) frozen peas

Heat the vegetable oil in a saucepan and saute the onion for 2 to 3 minutes. Add the chicken and saute until sealed. Add the sweet potatoes and carrots and pour over the chicken stock. Bring to the boil, then cover and simmer for 20 minutes. Add the frozen peas and continue to cook for a further 5 minutes. Puree in a food processor.
