1 x 3 lb oven-ready chicken, cut into 8 pieces
1 oz flour
6 bacon rashers, rinds removed and chopped
2 onions, finely chopped
1 x 11 oz can condensed mushroom soup
3/4 pint chicken stock or water
salt and freshly ground pepper
1 teaspoon paprika


Metric
1 x 1.5 kg oven-ready chicken, cut into 8 pieces
25 g flour
6 bacon rashers, rinds removed and chopped
2 onions, finely chopped
1 x 300 g can condensed mushroom soup
450 ml chicken stock or water
salt and freshly ground pepper
1 x 5 ml spoon paprika


Coat the chicken pieces with the flour. Place the bacon in a large deep dish and MICROWAVE ON HIGH for 5 minutes. Add the onions and MICROWAVE ON HIGH for 3 minutes until soft. Stir in the soup, stock and seasoning. Add the chicken pieces, arranging them so that the thicker parts are around the outside. Cover and MICROWAVE ON HIGH for 15-18 minutes, stirring three times during cooking. Leave to stand covered for 10 minutes. Test with the tip of a sharp knife and, if the chicken is not quite cooked, MICROWAVE ON HIGH for a further 3-4 minutes. Sprinkle with paprika.
