* 250 ml (8 fl oz) unsalted chicken stock
* 100 g (4 oz) couscous
* 15 g (1/2 oz) unsalted butter
* 25 g (1 oz) peeled and chopped onion
* 50 g (2 oz) courgettes (zucchini), washed and diced
* 2 tomatoes, skinned, de-seeded and chopped
* 50 g (2 oz) cooked chicken, diced

Bring the chicken stock to the boll and pour over the couscous, stir with a fork and set aside for 6 minutes, by which time it will have absorbed the stock. Meanwhile, melt the butter in a saucepan and saute the onion for 2 minutes. Add the courgettes and saute for about 4 minutes, then add the tomatoes and cook for 1 minute. Fluff the couscous with a fork and mix in the courgettes and tomato mixture together with the chicken.
