* 3 tomatoes, skinned, de-seeded and roughly chopped
* 25 g (1 oz) Cheddar cheese, grated
* 2 tbsp tiny pasta stars (or shapes)
* 25 g (1 oz) unsalted butter
* 1/2 small clove garlic
* 125 g (4 1/2 oz) button mushrooms, sliced

Cook the pasta according to the instructions on the packet. Melt the butter in a saucepan and saute the garlic for about 30 seconds. Add the sliced mushrooms and saute for 3 minutes. Add the tomatoes and cook, covered, until mushy (3 to 4 minutes). Stir in the cheese until melted. Puree the vegetable and cheese mixture, then stir in the cooked pasta.

Serves: 3 portions
