* 25 g (1 oz) butter
* 3 onions, peeled and finely sliced
* 1 tsp fresh thyme
* 1 clove garlic, crushed
* salt and freshly ground black pepper
* 50 g (2 oz) Parmesan cheese, grated
* 50 g (2 oz) Cheddar cheese, grated
* 50 g (2 oz) Gruyere cheese, grated
* butter to grease the dish
* 8 to 10 medium-sliced slices white bread, crusts removed
* 3 large eggs
* 500 ml (17 fl oz) full-fat milk
* 1/2 tsp English mustard

1. Pre-heat an oven to 190°C/375°F/Gas Mark 5. Melt the butter in a large saucepan and gently fry the onions until softened and lightly golden (about 10 minutes). Stir in the thyme and garlic and season with salt and pepper and leave to cool slightly. Mix together the three cheeses and stir into the onions.
2. Butter an oven-proof dish and lay in half of the bread and then sprinkle over half of the cheese and onion mixture.Top with the remaining bread and sprinkle over the other half of the cheese and onion. Mix together the eggs, milk and mustard powder and season with salt and pepper. Pour this over the cheese and bread and leave to soak for about 10 minutes. Bake in the oven for 25 to 30 minutes.
