* 8 small pitta breads

Cheese topping:
* 30 g (1 oz/6 teaspoons) butter or margarine
* 15 g (1/2 oz / 6 teaspoons) plain flour
* 250 g (8 oz / 2 cups) grated Cheddar cheese
* 75ml (2 1/2 fl oz / 1/3 cup) milk
* 1 egg yolk
* pinch of dry mustard
* pinch of cayenne pepper

To finish:
* 3 spring onions, chopped
* 2 eggs, hard-boiled and chopped
* hard-boiled egg and chives, to garnish

1. Preheat oven to 220C (425F/Gas 7). Make the topping. In a saucepan, melt butter or margarine. Add flour and cook, stirring, until smooth. Stir in half the grated cheese, then half the milk. Repeat with remaining cheese and milk. Beat in egg yolk. Stir in mustard and cayenne pepper and mix well.
2. Place pitta breads on a greased baking sheet. Spread topping over them. Bake in the oven for 10 minutes. In a bowl, mix chopped spring onions and hard-boiled eggs together. Sprinkle the mixture over the pizzas and cook for a further 2 minutes. Serve at once, garnished with slices of hard-boiled egg and chives.
