1 onion, peeled and quartered
1 x 10 oz can carrots
1 chicken stock cube
1 teaspoon tomato ketchup or tomato puree
salt and freshly ground pepper
1 tablespoon instant mashed potato powder
1/4 pint cold water


Metric
1 onion, peeled and quartered
1 x 275 g can carrots
1 chicken stock cube
1 x 5 ml spoon tomato ketchup or tomato puree
salt and freshly ground pepper
1x 15 ml spoon instant mashed potato powder
150 ml cold water


Place the onion in a bowl, cover and MICROWAVE ON HIGH for 2 minutes until soft. Shred, using a knife and fork. Add the carrots, together with the can liquid, the stock cube, tomato ketchup and seasoning. Cover and MICROWAVE ON HIGH for 5 minutes, then mash with a fork or potato masher. Blend the potato powder with the water and stir into the soup. MICROWAVE ON HIGH for 3 minutes, stirring occasionally.
