* 6 chicken thighs
* 1 tablespoon dark rum
* 1 tablespoon soy sauce
* 1 small can pineapple rings in natural juice
* 4 tablespoons oil
* salt and pepper

1. Make 2 deep slits on each side of the chicken thighs. Mix the rum, soy sauce and pineapple juice, then brush over the chicken. Cover and leave to marinate in the refrigerator or a cool place for 2 hours.
2. Season the chicken thighs lightly with salt and pepper, and grill over hot coals on a preheated barbecue for 15-20 minutes, brushing the chicken thighs with oil and turning them frequently. Grill the pineapple rings for 2-3 minutes on each side and serve with the chicken.
