Name Cabbage au Gratin

* 1/2 pint (300ml) milk
* 2oz (50g) beurre manie
* salt
* freshly ground black pepper
* a little ground nutmeg
* 1/2 teaspoon Dijon mustard
* 12oz (350g) cabbage, shredded
* 1/4 pint (150ml) water
* 2oz (50g) well-flavoured Cheddar cheese, grated
* 1oz (25g) fresh white breadcrumbs

1. Heat the milk in a microproof bowl on full power for about 2 minutes, then whisk in the beurre manie until smooth and thickened. Add seasoning to taste, nutmeg and mustard. Put the cabbage in a bowl with the water, cover with pierced clear film and cook on full power for 6 minutes. Drain thoroughly then stir into the sauce. Turn into a flameproof serving dish and sprinkle with cheese and breadcrumbs.
2. To serve, heat the dish on full power for 7 minutes, then transfer to a hot grill until the cheese and breadcrumbs are golden brown.
