3 oz plain chocolate, broken into squares
4 oz butter
2 eggs
8 oz sugar
1 teaspoon vanilla essence
4 oz flour, sifted
4 oz mixed chopped walnuts or almonds


Metric
75 g plain chocolate, broken into squares
100 g butter
2 eggs
225 g sugar
1 x 5 ml spoon vanilla essence
100 g flour, sifted
100 g mixed chopped walnuts or almonds


Line a 20 cm/8 inch square baking dish with cling film. Put the chocolate and butter in a bowl and MICROWAVE ON HIGH for 1 1/2-2 minutes until the chocolate is melted.
In another bowl, beat the eggs, sugar and vanilla essence together until thick and creamy. Fold in the sifted flour and chocolate mixture in alternate spoonfuls. Finally, fold in the chopped nuts. Turn into the dish and MICROWAVE ON HIGH for 6-7 minutes, giving the dish a quarter-turn every 1 minute during cooking. Leave to stand in the dish until completely cold.
Turn out and cut into squares.
