Bright-Pepper-and-Green-Bean-Stir-Fry_cIngredients:
* 8 oz (225 g) red peppers
* 1 1/2 tablespoons oil (preferably groundnut)
* 2 tablespoons coarsely chopped garlic
* 1 1/2 teaspoons salt
* 8 oz (225 g) French beans, trimmed and left whole
* 1 teaspoon sugar
* 2 tablespoons water

1. De-seed the peppers and cut them into strips.
2. Heat a wok or large frying-pan, then add the oil. Add the garlic, salt, peppers and beans and stir-fry for 2 minutes. Then add the sugar and water and continue to cook for another 4 minutes or until the vegetables are tender. Serve at once.

Preparation time: 15 minutes
Cooking time: 7 minutes
Serves: 4-6
