1  onion
2  apples
50 g/2 oz butter
800 g/1 1/2 pound red cabbage,
finely sliced
150 ml/5 fl oz orange juice
2 tablespoons soft brown sugar
1 tablespoon cinnamon
2 cloves
2 bay leaves
100 g/3 1/2 oz raisins


Preparation. Peel and finely chop the onion. Peel, core and finely chop the apples. Melt half the butter in a large casserole and fry the onions and apples for about 4 minutes until soft. Add the cabbage, orange juice, sugar, cinnamon, cloves, bay leaves and raisins. Cover and braise over a low heat for 30 minutes until cooked, occasionally stirring the cabbage.
To serve. Remove the cloves and bay leaves and stir in the remaining butter. Serve the cabbage in a warmed dish.
• Delicious with stew.
