* 150 g (5 oz) pasta bows
* 1 shallot, very finely chopped
* 1 x 200 g (7 oz) can tuna, drained and flaked
* 4 cherry tomatoes, quartered
* 50 g (2 oz) cooked frozen or canned sweetcorn
* 1 small avocado, peeled, stoned and cut into small cubes

* 2 tbsp mayonnaise
* 2 tbsp olive oil
* 2 tap fresh lemon juice
* a pinch of cayenne pepper

1. Cook the pasta according to the packet instructions. In a bowl, mix together all the ingredients for the salad, but don't add the avocado until just before serving or it will discolour.
2. Mix together the ingredients for the dressing. Drain the pasta and, when cool, mix with the salad and toss in the dressing.

Serves: 4 portions
