* 1 quantity Traditional Pizza Dough, shaped and ready for topping

* 8 streaky bacon rashers, rinds removed
* 1/2 small iceberg lettuce
* 4 tomatoes, roughly chopped
* 4-6 tablespoons mayonnaise
* salt and pepper
* shredded lettuce, to garnish

1. Preheat oven to 200C (400F/Gas 6). Grill bacon until cooked. Drain on absorbent kitchen paper, then with kitchen scissors, cut into pieces. Very finely shred the lettuce. In a bowl, mix bacon, tomatoes, lettuce and mayonnaise and season to taste with salt and pepper.
2. Spread the mixture over the dough. Bake in the oven for 20 minutes until the dough is crisp and golden. Serve at once, garnished with shredded lettuce.
