4 beefburgers, each about 4 oz
4 tablespoons oil
2 medium onions, finely sliced
1/2 oz butter
1 teaspoon flour
1/4 pint fresh orange juice
1/2 teaspoon Worcestershire sauce
1 tablespoon white wine vinegar
1 tablespoon tomato puree
4 canned tomatoes, drained and chopped
salt and freshly ground white pepper
strips of blanched orange rind to garnish (optional)


Metric
4 beefburgers, each about 100 g
4 x 15 ml spoons oil
2 medium onions, finely sliced
15 g butter
1 x 5 ml spoon flour
150 ml fresh orange juice
1 x 2.5 ml spoon Worcestershire sauce
1 x 15 ml spoon white wine vinegar
1x 15 ml spoon tomato puree
4 canned tomatoes, drained and chopped
salt and freshly ground white pepper
strips of blanched orange rind to garnish (optional)

Arrange the beefburgers around the edge of a dish, cover with absorbent kitchen paper and MICROWAVE ON HIGH for 4 minutes. Pour off the fat, cover and set aside.
Combine the oil and onions in a large shallow dish and MICROWAVE ON HIGH for 4 minutes. Arrange the onions over the beefburgers. Put the butter in a bowl and MICROWAVE ON HIGH for 30 seconds until melted. Stir in the flour and MICROWAVE ON HIGH for 30 seconds. Whisk in the orange juice, Worcestershire sauce, vinegar and tomato puree. MICROWAVE ON HIGH for 2-3 minutes, stirring occasionally. Stir in the tomatoes and seasoning. Pour the sauce over and around the beefburgers and MICROWAVE ON HIGH for 1-2 minutes to reheat through.
Garnish with orange rind.
Serves 4
