* 1 kg (2 lb) sirloin steak, trimmed of all fat and cut into 2 cm (3/4 inch) cubes
* 5 cm (2 inch) piece fresh root ginger, peeled and very finely sliced
* 100 ml (3 1/2 fl oz) soy sauce
* 100 ml (3 1/2 fl oz) sake or dry sherry
* 75 ml (3 fl oz) groundnut or sunflower oil
* 10 spring onions, green tops only, finery chopped

1. Thread the cubed beef and ginger slices on to some long, thin skewers, putting a slice of ginger after every 2-3 meat cubes. Lay the skewers in a long shallow dish.
2. Mix the soy sauce and sake or sherry with the groundnut oil. Blend well and pour over the beef and ginger skewers. Cover and leave to marinate in the refrigerator or a cool place for at least 2 hours.
3. Remove the skewers from the marinade and then cook over hot coals on a preheated barbecue for about 4-5 minutes. Turn the kebabs over and cook the other side. Serve hot scattered with spring onions.
