* 1/2 pint (300ml) milk
* 2oz (50g) beurre manie
* salt
* freshly ground black pepper

Heat the milk in a jug on full power for 2 to 3 minutes, then whisk in the beurre manie until the sauce is smooth and thickened. Add seasoning to taste and serve or use as a base for other sauces or dishes.

Cheese sauce: add 3oz (75g) well-flavoured grated Cheddar cheese, 1 teaspoon Dijon mustard and a little freshly ground nutmeg to the Basic White Sauce. Mix well and heat on full power for 1 minute before serving.

Parsley sauce: add 1 tablespoon chopped fresh parsley to the Basic White Sauce, Mix well and heat on full power for 1 minute before serving.

Mushroom sauce: add 3oz (75g) finely sliced mushrooms to the sauce. Mix well and cook on full power for about 2 minutes until the mushrooms are tender before serving.

Mustard sauce: stir 1 1/2 - 2 tablespoons made English mustard blended with 1 tablespoon white wine vinegar and 2 teaspoons sugar into the Basic White Sauce. Heat on full power for 1 minute until piping hot before serving.
