* 1 tablespoon sunflower oil
* 1lb (450g) parsnips, diced
* 8 oz (225g) ham, chopped
* 8 oz (225g) can tomatoes
* 1tablespoon freshly chopped parsley
* salt
* freshly ground black pepper
* 2oz (50g) fresh white breadcrumbs
* 2oz (50g) well-flavoured Cheddar cheese, grated

1. Measure the oil into a shallow microproof dish with the parsnip and mix lightly. Cover with pierced clear film and cook on full power for 3 minutes. Stir in the
power for s minutes. Stir in the ham. Pour on the canned tomatoes, sprinkle with parsley and season well.
2. Mix the breadcrumbs and cheese together and sprinkle over the parsnips. Cook on full power for 8 minutes, then transfer to a hot grill until the cheese and breadcrumbs are golden brown. Serve straightaway.
