* 1 tbsp vegetable oil
* 25 g (1 oz) peeled and finely chopped onion
* 15 g (1/2 oz) celery, finely chopped
* 25 g (1 oz) finely grated carrot
* 125 g (4 1/2 oz) lean minced beef
* 1 tbsp tomato ketchup
* 2 tomatoes, skinned, de-seeded and chopped
* 100 ml (3 fl oz) unsalted chicken stock
* 40 g (1 1/2 oz) spaghetti

Saute the onion and celery in the vegetable oil for 3 to 4 minutes. Add the grated carrot and cook for 2 minutes. Add the minced beef and stir until browned. Stir in the tomato ketchup, tomatoes and stock. Bring the mixture to the boil, then reduce the heat, cover and cook until the meat is cooked through (10 to 15 minutes). Meanwhile, cook the spaghetti until quite soft. Drain and chop into short lengths. Transfer the Bolognese sauce to a food processor and puree to a fairly smooth texture before combining with the pasta.
