* 1 quantity Traditional Pizza Dough, made up to end of step 2

* 2 ripe avocados
* 1 tablespoon lemon juice
* 30 g (1 oz/6 teaspoons) butter
* 30 g (1 oz / 1/4 cup) plain flour
* 315ml (10 fl oz / 1 1/4cups) milk
* salt and pepper
* 1/4 teaspoon cayenne pepper
* 375g (12 oz) crabmeat, thawed if frozen and drained
* 60 g (2 oz / 1/2 cup) grated Gruyere cheese
* avocado slices and tomato, to garnish

1. Preheat oven to 220C (425F/Gas 7). Knock back risen dough and knead briefly. Roll out dough and use to line a Swiss roll tin.
2. Make topping. Halve avocado remove stones. Scoop out flesh and chop roughly. Place in a bowl with lemon juice and stir lightly to coat. Set aside.
3. Melt butter in a saucepan. Stir in flour and cook for 2 minutes. Stir in milk, bring to the boil and simmer for 2 minutes. Season to taste with salt and pepper and cayenne.
4. Remove pan from heat. Stir in crab, cheese and avocado. Spread over the dough, then bake in the oven for 20 minutes until dough is golden. Cool slightly before cutting into fingers or squares. Serve garnished with avocado and tomato.
