* 1 quantity Traditional Pizza Dough, shaped and ready for topping

* 3 tablespoons olive oil
* 440g (14 oz) can artichoke hearts
salt and pepper
* 250g (8oz / 2 cups) grated Emmental cheese
* marjoram leaves and sliced pimento, to garnish

1. Preheat oven to 220C (425F/Gas 7). Brush the pizza dough with 1 tablespoon of the olive oil.
2. Drain artichokes and slice thinly. Arrange artichoke slices over dough. Sprinkle with remaining oil; season to taste with salt and pepper. Sprinkle the grated Emmental cheese over the top.
3. Bake in the oven for 20 minutes until dough is crisp and golden and cheese has melted. Serve at once, garnished with marjoram leaves and sliced pimento.
