* 100 g (4 oz) dried apricots
* 1 large papaya (pawpaw) (550 g / 1 lb 3 oz), de-seeded, peeled and chopped
* 100 g (4 oz) soft tofu

Put the apricots in a small saucepan and pour over 250 ml (8 fl oz) boiling water. Cover and cook until tender (about 5 minutes). Drain the apricots and puree together with the papaya and tofu until smooth.

Serves: 5 portions
