* 1 large cooking apple, peeled, cored and sliced
* 15 g (1/2 oz) butter
* 25 g (1 oz) raisins
* 4 thick bacon chops
* oil, for brushing

1. Put the sliced apple in a small pan with the butter and cook very gently over a low heat until the apple slices are tender. Break up with a fork and stir in the raisins.
2. Using a sharp knife, cut into the side of each bacon chop to make a pocket, but do not cut all the way through the bacon. Pack the apple and raisin mixture inside the chops.
3. Brush the chops lightly with oil and then grill over medium coals on a preheated barbecue for 6-8 minutes on each side or until the meat feels firm. Serve at once with baked jacket potatoes topped with soured cream and snipped chives.
