4 small Cox's Orange apples
50 g/2 oz raisins
80 g/3 oz sugar
1 teaspoon cinnamon
25 g/1 oz butter
40 g/1 1/2 oz custard powder
800 ml/1 1/2 pints milk

Preparation. Preheat the oven to 175 °C/375 °F. Peel and core the fruit with an apple corer. In a bowl combine the raisins with the cinnamon and 2 tabLespoons of sugar. Stuff the mixture into the centres of the apples.
•  Lay the apples side by side in a greased shallow oven dish. Dot each apple with butter and bake for 30 minutes until done.
•  In a small bowl blend the custard powder and remaining sugar with 100 ml/2 1/2 fl oz milk until a smooth paste. Bring the rest of the milk to the boil in a pan and add the custard paste, stirring all the while. Continue stirring until the custard is thick and smooth.
To serve. Spoon the custard sauce over the apples and serve hot.

Add finely chopped balls of stem ginger, Amaretti biscuits, or pecan nuts to the raisin stuffing. Place the apples in individual oven dishes. When baked pour fresh chilled custard sauce over apples.
