Potato & Leek Soup


  • 454g/1 lb potatoes, chopped
  • 1 large onion, chopped
  • 2 sticks celery, chopped
  • 454g/1 lb leeks, chopped
  • 1136ml/2 pt stock made with Vecon
  • 142g/5 oz Total 0% Natural Greek Yogurt
  • salt & ground black pepper

Place all the ingredients except for the yogurt and a few chopped leeks into a large saucepan and bring to the boil. Simmer for 20-25 minutes until the vegetables are tender. Whilst the soup is simmering, place the remaining chopped leeks into a small saucepan and cover with water. Bring to the boil and simmer gently for 5 minutes. Transfer the soup into a blender, add the yogurt and puree. Return the soup to the large saucepan, stir in the chopped leeks and heat through adding more water if necessary. Season to taste before serving.
