Grilled chicken snacks

Ingredients

  • 24 skinned chicken wings on the bone (36 Sins on Green)
  • OR 24 skinned chicken thighs
  • OR drumsticks on the bone (60 Sins on Green)
  • lemon wedges and salad leaves, to garnish
  • For the honey and ginger coating:
  • 4 level tablespoons runny honey (6 Sins)
  • 3 tablespoons soy sauce
  • juice and grated lemon zest of 1 lemon
  • 1 x 2.5 cm/1 in piece fresh root ginger, peeled and chopped

1. Mix all the coating ingredients together and brush over the chicken wings, thighs or drumsticks.

2. Arrange the coated chicken on a rack under a preheated hot grill about 10 cm/4 in from the heat. Grill for about 20-25 minutes, turning occasionally and basting with any leftover coating mixture. Make sure that the chicken is thoroughly cooked.

3. You can serve the chicken hot or cold. Arrange on a large platter garnished with lemon wedges and salad leaves.

Variations

Teriyaki chicken

For a Japanese flavour, marinate the chicken in 4 tablespoons teriyaki sauce (2 Sins), 2 crushed garlic cloves and the grated zest of 1 orange for 15 minutes. Remove from the marinade and grill as instructed.

Sins per serving: Negligible on Original; 1 1/2 sins on Green for wings, 2 1/2 Sins on Green for thighs or drumsticks


Spicy garlic chicken

Marinate the chicken in 170 g/6 oz very low fat natural yogurt mixed with 2 crushed garlic cloves, 1-2 deseeded and finely chopped chillies, 2 teaspoons paprika and 1 teaspoon ground cumin. Remove from the marinade and grill for 20-25 minutes, basting and turning frequently.

Sins per serving: FREE on Original; 1 1/2 Sins on Green for wings, 2 1/2 Sins on Green for thighs or drumsticks


Barbecued chicken

Mix 2 level tablespoons tomato ketchup (1 Sin) with 1 level tablespoon Dijon mustard (1 1/2 Sins), 1 level tablespoon mango chutney (2 Sins), 2 crushed garlic cloves, a dash of Tabasco and the juice of 1 lemon. Use to coat the chicken and then grill for 20-25 minutes, turning and basting as directed above. Before serving, coat the hot chicken with a dusting of paprika and some ground sea salt.

Sins per serving: Negligible on Original; 1 1/2 Sins on Green for wings, 2 1/2 Sins on Green for thighs or drumsticks


Mustard and lemon chicken

Mix 4 level tablespoons whole-grain Dijon mustard (6 Sins) with the juice of 2 lemons and 2 crushed garlic cloves. Brush over the chicken, then grill for 20-25 minutes, turning and basting until cooked.

Sins per serving: 1/2 Sin on Original; 2 Sins on Green for wings, 3 Sins on Green for thighs or drumsticks
