1 large cantaloupe melon
3/4 oz butter
1 tablespoon sugar
grated rind and juice of 1/2 lemon

3/4 pint water
1/4 pint sweet white wine

Metric
1 large cantaloupe melon
20 g butter
1x 15 ml spoon sugar
grated rind and juice of 1/2 lemon
pinch of ground ginger
pinch of ground mace
450 ml water
150 ml sweet white wine
mint sprigs

Cut the melon in half and discard the seeds. Scoop a few melon balls from the flesh, using a melon bailer. Set aside for garnish. Remove and dice all the remaining melon flesh, place in a large deep casserole with the butter, sugar, lemon rind and juice, ginger and mace. MICROWAVE ON HIGH for 5 minutes. Puree in a blender or press through a sieve. Stir in the water and wine and chill in the refrigerator for 2-3 hours. Adjust the seasoning and serve chilled, garnished with melon balls and mint.
